SPICY JOE'S

2 tablespoons olive (or vegetable) oil
1 large onion, chopped
4 cloves garlic, minced
1 large carrot, chopped
1 1/2 lbs ground beef or chicken
2 tablespoons chili powder
2 teaspoons cumin
1/2 teaspoon cayenne pepper
2 tablespoons Worcester sauce
1/4 cup red wine
1/2 cup beef stock or broth
4 tablespoons brown sugar
1 can rotel
16 ounce can tomato sauce
Salt & pepper to taste
1 cup shredder cheddar cheese
4 onion rolls (want to make fresh, recipe posted earlier on this blog)

In a large skillet (preferable cast iron) heat oil over medium heat. Add onions, garlic and carrots. Cook, stirring occasionally until onions begin to soften, about 3 minutes.

Add ground beef (or chicken) and cook, while crumbling the meat, until browned.

Add spices and cook for 2 minutes.

Add Worcestershire, wine, stock and brown sugar. Stir until combined. Add Rotel and tomato sauce, stir and bring to a boil. Decrease heat to low, cover and simmer for 30 minutes, stirring occasionally to keep from sticking.

Uncover and increase heat to medium and cook until mixture thickens.

Split onion roll, fill with meat, top with cheese and serve.
