ITALIAN SAUSAGE FRITTATA

This recipe serves 4-6 and can be made as is or a healthier version by substituting turkey sausage and low fat sour cream and milk.

1 pound Italian sausage in casing (hot or mild... turkey or regular)
2 tablespoons olive oil
1 medium potato, cut into 1" pieces
1 medium onion, cut into 1" pieces
2 cloves garlic, minced

6 egg whites
4 whole eggs
3 tablespoons sour cream
1/4 cup milk
Salt & Pepper to taste

1/4 cup mozzarella cheese
1/2 cup Parmesan cheese
1-2 cups of your favorite chunky marinara sauce, heated

Cook sausage on grill or in a skillet. Cool slightly and slice, set aside.

Add oil to cast iron (or other oven proof) skillet and warm over medium heat. Add chopped potato and onion. Cook until potato is almost soft. Add chopped garlic. Cook for 3 more minutes. Add a little more olive oil if needed.

While potato is cooking, pre-heat oven to 350 degrees. Then in a medium bowl, combine egg whites, eggs, sour cream, milk and salt & pepper and whisk.

Add sausage to potato mixture and re-warm if needed. Turn skillet up to medium high and heat for 2-3 minutes. Spread mixture out throughout pan and top with egg mixture. Cook for 2-3 more minutes, sprinkle with mozzarella and 1/2 of Parmesan cheese and bake for 10 minutes or until egg mixture is cooked.

Serve with marinara sauce and additional Parmesan cheese.
