Here is a healthy recipe..... and quick too! I like to make extra chutney to add to a salad or toss with cold rice and chopped left-over chicken.... yum!
2 cups pineapple, cut into 1/2" pieces
1/4 cup chopped red bell pepper or roasted red bell pepper
1/2 cup chopped onion
1-2 tablespoons chopped jalepeno
2-3 tablespoons chopped cilantro
juice from 1 lime
zest from 1/2 lime
1 1/2 pounds Mahi Mahi
1 clove garlic, minced
1-2 teaspoons Old Bay Seasoning
Jasmine or Basmati rice
Combine first 7 ingredients and mix well. Set aside
Sprinkle garlic and Old Bay on fish. Grill or broil the fish until flaky. Serve with chutney and rice.
