ANGEL HAIR AND CHICKEN CARBONARA



Ok, there is nothing healthy about this but…… it is so yummy. This is one of David's favs!
Typically when I think of comfort food, I think of southern or down home American food but this is the perfect Italian comfort food!

3 whole eggs

6 strips bacon
1 medium onion, sliced
2 cloves garlic, minced
1- 1 1/2 cups veggies (zucchini, red bell peppers, broccoli, asparagus or peas... whatever you like/have on hand!)

1 tablespoon vegetable oil
2 boneless, skinless chicken breast
Salt & pepper

Angel hair pasta for 2 people
Salted water for boiling pasta
1 cup reserved pasta water

1 tablespoon olive oil
2 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 teaspoon red pepper flakes (or more if you like it hot!)
1 cup grated parmesan cheese

Place eggs (in shell) in a bowl of warm water and let sit.

In a large skillet (I always prefer cast-iron) cook bacon over medium low heat until crispy. Remove to paper towel to drain, then chop. Drain off all but 1 tablespoon bacon grease. Add sliced onion, garlic and veggies to skillet and cook over medium heat until softened and beginning to brown. Remove to bowl and set aside.

Sprinkle chicken breasts with salt and pepper. Heat oil in skillet over medium heat, add chicken breasts and cook 3-5 minutes, flip, cook other side 3-5 minutes. Cover and reduce heat to medium low and cook until chicken is cooked through (170 degrees) if needed (depends on breast size). While chicken is cooking, cook pasta according to package directions. Reserve 1 cup pasta water!! When chicken is cooked through, remove chicken to plate and cover. Let stand 3-5 minutes and then slice chicken.

In same un-cleaned skillet, add olive oil, garlic and red pepper flakes. Cook until garlic is soft and beginning to brown. Add heavy cream and broth. Stir and cook until it reduces a little (about 1 1/2 cups) about 3-5 minutes

Drain pasta and place in large, shallow bowl. Crack eggs into a separate bowl and beat, slowly whisk milk mixture into eggs. Pour this mixture over drained pasta and stir. Add chopped bacon, sliced chicken, veggies and parmesan cheese. Add reserved pasta water if sauce is too thick. Use additional water if necessary. Serve with additional parmesan cheese and red pepper flakes, if desired.
