I made this one for Mom and she couldn't stop talking about how good it was!! I found the original recipe on epicurious.com, doubled the vinaigrette and added the grilled onions....YUM!! Although a little messy, (aren't all great sandwiches) the combination of the salad and sandwich is SO good! I suppose you could also substitute chicken and it would still be good......or better yet, if you are trying to be healthy, use turkey kielbasa (there is something about the vinaigrette with the kielbasa taste that goes so well together). You may want to mix up a little extra of the vinaigrette to have on a salad for lunch the next day.
1 large onion, sliced
1-2 tablespoons vegetable oil
3/4 to 1 lb whole smoked kielbasa or kosher salami
4 tablespoons olive oil
2 tablespoon Dijon mustard
2 tablespoon drained bottled horseradish
4 teaspoons white-wine vinegar
2 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups lettuce torn into small pieces
4 sliced onion rolls
Whisk together oil, mustard, horseradish, vinegar, honey, salt, and pepper in a small bowl until emulsified. Set aside.
Butter onion rolls and broil, grill or pan fry until toasted. Set aside.
Warm oil in a skillet over medium heat. Add sliced onions and toss. Cook over medium heat until onions turn soft and browned. Season with salt and pepper to taste. Remove from skillet and keep warm.
Cut kielbasa crosswise into 4 long sections, then halve each section lengthwise. Grill or pan fry in cast iron skillet until cooked through and browned.
Toss lettuce with half of vinaigrette and reserve remainder.
To serve, place bottom of onion rolls on plates, top with lettuce, keilbasa and onions. Drizzle with remaining vinaigrette and top with other half of roll. You'll probably need a fork & knife for this one!
