LITE CHICKEN SALAD

We love this recipe. It is light and healthy and versatile. I have it listed with brown rice (healthier than white) but if you want low carb, eliminate the rice altogether, it is still yummy!

Chicken mixture
2 cooked, chopped or shredded chicken breasts (or canned chicken breast)
3/4 cup corn
2 tablespoons chopped roasted red bell pepper (or pimentos)
1 small onion, diced
1 teaspoon chopped jalapeno
1/2 cup brown rice, cooked and cooled

Dressing
1/4 cup lemon or lime juice
2 tablespoons oil
1 teaspoon season-all
1/2 - 1 teaspoon hot pepper sauce (depending on heat preference)
2 tablespoons honey

Combine chicken mixture ingredients. Combine dressing ingredients, stir well (honey will settle). Pour dressing over chicken mixture. Serve with triscits, on salad greens or in a flour tortilla.
