KIELBASA, BLACK BEANS & RICE

4 strips bacon, cut into 1" pieces
1 medium onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
4 ounces sliced mushrooms
1 teaspoon dried tarragon
1/2 - 1 teaspoon cayenne pepper (depending on how much heat you like)
2 cans black beans
1 1/2 pounds kielbasa, sliced
2 cups beef broth
3 cups cooked, warm brown (or white if you prefer)rice

In a large cast iron (or other) skillet cook bacon until almost crispy. Add onion, bell pepper and garlic and cook until veggies begin to soften. Add mushrooms and sprinkle tarragon and cayenne pepper over mixture and stir. Add black beans, kielbasa and broth. Stir and cook until broth begins to thicken slightly. Decrease heat to low and cover. Cook on low heat for 15-20 minutes. Serve over rice.
