COCONUT CURRY BEEF WITH CHICK PEAS

Well, here is another curry recipe! At Pei Wei, I always ordered coconut curry beef and I looked for a recipe to duplicate it.... couldn't find one but came up with this. If you like spicy food and have never tried curry, you have to try this! Another great thing is that you can buy cheap sirloin steak and it will come out really tender! Another plus is that curry has turmeric and according to Dr. Oz, that may help us prevent dementia and alzheimers!!

2 tablespoosn vegetable oil
1 large onion, chopped
3 tablespoons curry powder
1 teaspoon chili powder
1 1/2 pounds sirloin steak sliced into 2" strips
1 14oz can coconut milk (NOT cream of coconut .... that is for pina coladas!!)
3/4 cup beef broth
1 can chick peas
1 cup baby spinach leaves
4 cups cooked basmati or jasmine rice (or brown rice)


Over medium heat, warm oil in large skillet and add chopped onion. Cook until onion begins to soften. Increase heat to medium high and add curry and chili powders. Add sliced sirloin and cook for 2-3 minutes. Decrease heat to low. Add coconut milk and broth. Stir, cover and simmer for 1 to 1 1/2 hours. Stir occasionally.

Add chick peas (meanwhile make rice according to package directions) and stir, Cover again and simmer for 20-30 minutes. Remove cover and increase heat to medium high. Cook until liquid begins to thicken.

Just before serving, add fresh spinach and stir until wilted but still bright green. Serve over rice.
