For crêpes
3/4 cup all-purpose flour
1/2 teaspoon salt
1 1/4 cups whole milk
1 whole large egg
1 large egg yolk
1 tablespoon unsalted butter, melted
Chicken
2 boneless, skinless chicken breasts
1 cup chicken broth
1/4 cup sliced onion
1-2 cloves minced garlic
Filling
4 tablespoons unsalted butter
1/4 cup all-purpose flour
1 1/4 cups whole milk
1 1/4 cups chicken broth (strain broth from cooked chicken above. Add additional if needed to make 1 1/4 cup)
1/4 cup chopped onion
1 cup chopped mushrooms
1-2 tablespoons red wine (optional)
1/4 cup chopped, packed spinach (fresh or frozen) Can also use steamed asparagus, broccoli, green beans, peas..... any veggie that you like!
Prepare Crepe Mixture: Combine crepe ingredients and whisk until smooth. Place in a pourable container (like a liquid measuring cup). Let mixture sit for 30 minutes.
Prepare Chicken: Pre-heat oven to 350 degrees. Place chicken breasts in a baking pan just large enough to lay flat side by side. Add remaining chicken ingredients. Cover with foil and bake for 20-30 minutues or until chicken cooked through (170degrees). Cool chicken and shred, return chicken to broth.
Prepare Crepes: While chicken is baking, heat a small non-stick saucepan over medium high heat. Spray with cooking spray. Stir crepe mixture and pour some of mixture in pan. Swirl pan to coat, cook until crepe firms up (1-3 minutes), flip and cook for about 1 minute. Remove from pan and set aside. Continue this process until all crepes made. Recipe should make 6-8 depending on size.
Prepare filling: In a medium sized saucepan, melt butter over medium heat. Add flour and whisk until smooth. Cook for 2 minutes. Add milk and broth, whisk until smooth. Cook over medium heat until sauce begins to thicken.
Prepare Mushrooms: While sauce is cooking, melt 1 tablespoon butter in a frying pan. Add onions and mushrooms and saute until softened.
Add mushroom/onion mixture, chicken and wine to sauce. Stir to combine.
Assemble Crepes: Pre-heat oven to 350 degrees. Lay out one crepe, spread chicken mixture across middle of crepe, top with some of spinach and roll/fold up. Place in baking pan. Continue making the rest of crepes the same way. Top with parmesean cheese and bake for 15 minutes.
