MEATLOAF

I was never much of a fan of meatloaf, but David talked me into making one for him and this is what I came up with........ I actually enjoyed it and make it quite often! I usually serve it with scallopped potatoes.

This recipe makes enough for two meatloaves. I make them both, put the topping on one of them and freeze the other one. When I am ready for the second one, I thaw it in the fridge all day and then that evening I cover it with the topping and bake as directed.


Meatloaf:
1 1/2 cups whole milk
1 1/3 cup bread crumbs (or 4 slices bread, toasted, dried and crumbled)
1 pound ground beef
1 pound ground turkey (can use all ground turkey or ground beef if desired)
1 medium onion, chopped
1 teaspoon sage
4 tablespoons ketchup
3 eggs
1 teaspoon salt
1 teaspoon black pepper

Topping:
1 cup ketchup
1/2 cup brown sugar
2 tablespoons yellow mustard or 2 teaspoons dry mustard

Preheat oven to 350 degrees.

In a large bowl combine milk and bread crumbs. Add remaining meatloaf ingredients and mix well with your hands. Divide mixture into 2 and shape into loaf (about 8"x 4") on a baking sheet.

Combine topping ingredients, mix well and spread over top of meatloaf.

Bake uncovered at 350 for 40-45 minutes or until meat thermometer inserted in center of meatloaf registers 160 degrees.
