When I had my bakery, I searched and experimeNted with a lot of recipes to find the perfect brownie and the perfect cheesecake. This was the brownie recipe that I decided on. This one always gets rave reviews! It really helps to have a stand mixer for this recipe because the secret is in the "fluffiness" of the batter!
6 ounces usweetened baking chocolate squares
1 cup (2 sticks) unsalted butter
5 eggs
3 cups sugar
2 teaspoons vanilla
1 1/2 cups all purpose flour
1/2 teaspoon salt
1 cup nuts (optional)
Preheat oven to 350 degrees and grease a 9x13 pan.
Place eggs, sugar and vailla in bowl of stand mixer and beat on medium high speed for 10 minutes. Mixture will become light and fluffy.
While eggs and sugar are mixing, melt chocolate and butter over low heat, stirring frequently until smooth.
Decrease mixer speed to lowest setting and slowly add chocolate to egg mixture while mixing. Turn off mixer and add flour and salt. Stir with a rubber spatula just until mixed. Add nuts if desired.
Pour mixture into prepared pan and bake for 25-30 minutes or until toothpick inserted in center has just a few crumbs sticking to it.
Cool and cut into squares. As an added touch you could drizzle with melted white or regular chocolate, caramel, more nuts..... anything you loike, use your imagination. Great with ice cream too!!
