CHICKEN LO MEIN STIR FRY

I found Lo Mein Noodles at the store so I thought I'd try it out. I checked out some recipes and came up with this.... it is so YUMMY and healthy!! The noodles that I found were made with wheat flour so that also helped on the carb side of things. (They weren't gummy like some wheat pasta can be either!) I used beef, chicken and shrimp but you could use any combination that you like or eliminate them all (or try tofu) and make it vegetarian. You can also use any veggies that you like but I've listed the ones that I used.

MARINADE:
3 tablespoons soy sauce
3 tablespoons red wine vinegar
2 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons vegetable oil

1 boneless, skinless chicken breast
1/2 pound beef flank steak
10 shrimp, cleaned and peeled
1 tablespoon vegetable oil

VEGGIES: I didn't list amounts ..... just add as much or as little as you like of each one
1 tablespoon vegetable oil
2 cloves garlic, minced
broccoli florets
carrots, jullienned
onion, sliced
green beans, whole or frenc cut
red bell pepper, jullienned
bean sprouts, fresh or canned
red cabbage, thinly sliced
mushrooms, sliced

SAUCE:
1/4 cup soy sauce
3 tablespoons sugar
1 teaspoon cornstarch
1/2 teaspoon ginger, minced or 1/2 teaspoon powder
1 clove garlic, minced
1 cup chicken broth
2 tablespoons vegetable oil
1/2 teaspoon fresh ground black pepper

Lo mein noodles

Combine marinade ingredients and place in a ziptop bag. Cut the chicken, beef and shrimp into 1/2" peices and add to marinade. Place in refrigerator and marinate for at least 15 minutes up to 24 hours.

When ready to begin preparations, begin by heating the water for the lo mein noodles. (don't cook them yet, just get the water boiling)

Heat 1 tablespoon vegetable oil in wok or skillet. Add chicken and beef and stir fry for 3-5 minutes then add 1/2 of marinade to pan and cook until meat is almost cooked through, about 5-8 minutes. Add shrimp and cook until it just starts to turn pink, 2-3 minutes. Remove chicken, beef and shrimp to a bowl and keep warm. Clean wok or skillet before cooking veggies.

Add 1 tablespoon vegetable oil to wok or skillet and add garlic. Cook over medium heat until slightly browned. Add firm veggies (broccoli, carrots, beans) and cook for about 3-5 minutes. Then add other veggies and cook until they just beging to soften. Add mushrooms and chicken, beef and shrimp turn heat to low and cover.

While veggies are cooking, combine sauce ingredients in a small sauce pan set aside. When you add the noodles to the boiling water(next step), cook the sauce over medium low heat until it just begins to boil and thicken slightly.

Cook lo mein noodles in boiling water (that you started earlier) and cook acoording the package directions. (My package said to add noodles, return to boil and reduce heat to low and cook for 5 minutes then drain.)

Add noodles to wok or skillet with other ingredients and top with sauce. Toss to mix and serve.
