COCONUT-LIME "SNOWBALLS"

This is a recipe from an advertisement in one of my magazines: www.butterisbest.com
I just changed the topping.... details below!

COOKIES:
2 sticks butter, slightly softened
1 cup powdered sugar
2 teaspoons lime juice
1 1/2 teaspoon finely grated lime zest
1/4 teaspoon salt
2 cups all purpose flour
1 cup shredded coconut

TOPPING:
1 cup shredded coconut
1 cup powdered sugar
1 1/2 teaspoon finely grated lime zest
1 tablespoons cornstarch
1-2 tablespoons whole milk (optional... I added this)

Pre-heat over to 350 degrees.

Beat butter and powdered sugar with mixer until light and fluffy (3 minutes with a stand mixer or 6 minutes with hand mixer). Add lime and beat until combined. Gently fold in zest, salt, flour and coconut until combined.

Lightly flour hands and roll dough into 1" balls and place on ungreased cookie sheet about 1 1/2" apart. Bake until puffy and bottoms beging to brown, about 15 minutes.

While baking, combine all topping indredients except milk in a bowl. When cookies are done, let cool on cookie sheet for about 5 minutes. While still warm, toss in topping mixture and place back on cookie sheet.

At this point, according to the recipe, you are done. I think that as is, there isn't enough topping and it doesn't look like a snowball as it should so here i s what I do.....
After tossing cookies and placing back on cookie sheet, you will have a fair amount of the topping mix left in your bowl. I add the milk and toss with my hands to mix. Then place a little of the coconut mixture on top of each cookie and bake again for 2 or 4 minutes. Serve warm or store in a zip top bag.
