OK.... there is nothing healthy, inventive or different about this recipe but these are sooooo good. They are the kind of onion rings that have that light, crispy batter. YUM! Plus, you can refrigerate the leftovers (or make then ahead) and they crisp right back up in a 350 degree oven for about 10-15 minutes.
1 1/3 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon vegetable oil
2 egg yolks
10 ounces beer
2 large sweet onions, sliced
Vegetable oil for frying
Combine all ingredients except onion in a bowl. Combine and refrigerate for 1-3 hours.
In a heavy deep skillet, pour about 2 inches of oil. Over medium low to medium heat, warm until you begin to see a wavyness or small bubbles. Test oil with a small amount of batter and it is ready if the batter bubbles.
Dip onion rings in batter and then place in oil. Fry until golden and flip to fry the second side. Drain on paper towels and serve with ranch or your favorite dipping sauce. See note above about re-heating.
