CILANTRO-LIME MARINATED SHRIMP

This recipe is from my "Gourmet Cookbook"... pretty much as printed. I just increased the red pepper flakes a bit because I like a little more "kick". If you are preparing for a party and don't want to have to deal with pan-frying at the last minute, I think they'd also cook up well in the oven under the broiler for about 5-8 minutues.

3 large garlic cloves
1 teaspoon salt
1/2 cup fresh squeezes lime juice
1/4 cup sweet orange marmalade
1/4 cup chopped cilantro
4 tablespoons olive oil
1 tablespoon soy sauce
1 teaspoon red pepper flakes
1 pound large shrimp (cleaned and peeled but tail left intact)

Mash garlic with salt into a paste. Add lime juice and marmalade and whisk to combine. Add cilantro, 3 tablespoons oil, soy, red pepper flakes and pepper and stir. Transfer 1/3 cup sauce to another bowl and reserve for dipping sauce. Add shrimp and remaining mixture to a zip top bag and marinate for at least 15 minutes but up to 3 hours.

Heat 1 tablespoon oil in skillet over medium heat. Remove shrimp from marinade and add to skillet. Cook, turning occasionally until golden brown and just cooked through, about 3-4 minutes. Garnish with cilantro and serve with dipping sauce.
